Ingredients:
For Pie
3 Cups of Flour
2 tsp. Baking Powder
1 tsp. of Salt
2 tbsp. of Sugar
1 tsp. of Oil
2 Cups of Water
1 tsp. of Yeast
For Filling
2 Pounds of Potato
2 Cloves of Garlic
2 Bandania (Culantro) Leaves
2 Blades of Chive
Small Pepper for flavor
1 tsp. Geera
1 tsp. Salt
Directions:
For Pie
Step 1: Mix 3 cups of flour, 2tsp baking powder, 1 tsp salt, 2 tbsp sugar, 1 tsp oil, 2 cups of water and a pinch of yeast into a dough.
Step 2: Set dough aside for 10-15 minutes
For Filling
Step 1: Boil 2 pounds of potatoes until soft, drain and mash into a bowl.
Step 2: Add two cloves of minced garlic, 2 leaves of bandania, 2 blades of Chive, small pepper and mix into mashed potatoes.
Step 3: Add 1 tsp of geera and 1 tsp of salt into the potato mixture.
Step 4: Set aside for about 10 minutes
Final Preparation
Step 1: While the filling is set aside, add 3 cups of oil into a pot and set on the stove at low heat.
Step2: Take dough and roll it out into a large pizza like circle.
Step 3: Once rolled out use a circle cookie cutter and cut out as many circle from the dough as you can.
Step 4: Once the circles are cut out, you may now take the filling and spoon it on top of each circle.
Step 5: Once filled then take one side of the pie and fold it over to the other and squeeze the ends together to seal the filling in. (You can also use a fork to give the seal a decorative look)
Step 6: Add pies into the pot and fry until they it starts to swell and brown flipping it throughout.
