Ingredients:

To make Rota

2 cups flour
2 teaspoon cardamom (elachi, elychee)
2 teaspoon ginger
1/4 cup ghee
2 cups ghee
1/2 condensed milk
1/4 cup water
1/2 cup sugar

Directions:

Step 1: Mix 2 cups of flour with 2 teaspoon of cardamom, 2 teaspoon of ginger and 1/4 cup of ghee.

Step 2: Mix 1/2 cup condensed milk with 1/4 cup water and 1/2 cup sugar and pour into mixture.

Step 3: Mix and knead until you mixture is smooth and firm. Add additional flour by sprinkling if mixture is too moist or soft.

Step 4: Let dough mixture sit for approximately 10 minutes.

Step 5: Add 2 cups ghee to pot under medium heat (the amount of ghee will vary depending on the size of pot).

Step 6: Divide dough into 5 equal portions, roll and flatten into a round shape with hand (a rolling pin can be used).

Step 7: Once the ghee is hot, place flattened dough mixture into pot and let sit for approx 1 1/2 minutes and flip over.

Step 8: Continue to flip dough every 1 1/2 for approximately 5 minutes total or until cooked.
